A popular in Middle Easters green soup that can be made in many different ways but the most famous is the Egyptian Molokhia. Join me and I will show you all the tips and tricks for making the best Egyptian Molokhia ever.

Molokhia, also Mulukhia is a green soup made from minced Jews/Jute mallow leaves and cooked in broth. This is the Egyptian Molokhia with all its tips and tricks from my grandma's kitchen.

 

Molokhia

In our home Molokhia is indeed a love story when it is there on the table everyone gets excited about dinner. I make Molokhia almost weekly, it is my kids' favorite thing to eat with rice.

 

 

Almost everyone I know loves Molokhia and it is a mother's secret in Egypt to feed little kids other vegetables too. You see when kids pass their first year, and some people even do it earlier, we introduce the famous rice and Molokhia combo to them. 99.9% of the kids love it, after they get used to it Egyptian moms start their tricks. Put a pile of rice with Molokhia and hide anything in there. Broccoli, peas, carrots, beans.... and so on. Just make sure to cut them into small pieces and the kids will gladly lick their plates. Of course when they get older they will start to object, but at least they got something and you'll feel good about their dinners :).

 

Mulukhiyah

 

Mulukhiyah (Arabic: ملوخيةromanizedmulūkhiyyah), also known as molokhiyyamelokhiyya, or ewedu, is a type of jute plant and a dish made from the leaves of Corchorus olitorius, commonly known in English as jutejute leavesjute mallownalta jute, or tossa jute.  It is used as a vegetable and is mainly eaten in Egyptthe Levant (Syria, Lebanon, Palestine and Jordan), SudanCyprusLibyaTunisia and Algeria.

 

It is called saluyot in the Philippines. Mulukhiyah is rather bitter, and when boiled, the resulting liquid is a thick, highly mucilaginous broth; it is often described as "slimy", rather like cooked okra.

 

 Mulukhiyah is generally eaten cooked, not raw, and it is either eaten chopped and sautéed in oil, garlic and cilantro like in Syria or turned into a kind of soup or stew like in Egypt, typically bearing the same name as the vegetable in the local language. Traditionally mulukhiyah is cooked with chicken or at least chicken stock for flavor and is served with white rice, accompanied with lemon or lime.

 

Origins and history

While most scholars are of the opinion that mulukhiyah's origins lie in Ancient EgyptCorchorus capsularis, which is also used for food as well as fiber.

 

Mulukhiyah was a known dish in the Medieval Arab world. The recipe on how to prepare it is mentioned in the 14th-century Arabic book Kanz el-Fawa'id fi Tanwi' el-Mawa'ed. According to the Egyptian historian al-Maqrizi (d. 1442), mulukhiyah was the favorite dish of caliph Muawiyah ibn Abi Sufyan (r. 661–680) the founder of the Umayyad Caliphate. Furthermore, on the 7th of Muharram in the year 395 AH (1005 AD) the Fatimid ruler of Egypt el-Hakem be Amr Ellah (The Governor by the Order of God)(r. 996–1021) issued a decree which prohibited his subjects from eating the mulukhiyah, which was thought to be an aphrodisiac. However, his successor caliph al-Zahir (r. 1021–1035) permitted the eating of mulukhiyah again. The Druze, who hold Al-Hakim in high regard and give him quasi-divine authority, continue to respect the ban, and do not eat mulukhiyah of any kind to this day.

Nutrition

The leaves are rich in folatebeta-caroteneironcalciumvitamin C and more than 32 vitamins, minerals and trace elements. The plant has a potent antioxidant activity with a significant α-tocopherol equivalent vitamin E.

 

Ancient references

The word for the plant is found in ancient Mediterranean languages such as Egyptian and Greek. Cognates of the word include Ancient Greek μαλάχη (malákhē) or μολόχη (molókhē), Modern Greek μολόχα (molókha), Egyptian Arabic ملوخيه (molokhiyyah) and Modern Hebrew מלוחיה (malukhia).

HOW TO GROW EGYPTIAN SPINACH AKA MOLOKHIA

Molokhia, or also more commonly known as Egyptian spinach, is a tasty edible green that grows very quickly and easily! Popular in Egyptian cuisine, the molokhia plant is usually ready for harvest after 60 days, and, if uncut, can grow as high as 6 feet tall. Egyptian spinach prefers hot weather so it's best to grow this plant in a warm spring or summer. Keep reading to find out how to grow Egyptian spinach, also known as molokhia!

 

HOW TO GROW EGYPTIAN SPINACH

PLANTING EGYPTIAN SPINACH:

  • Sow seeds directly into the ground in the spring after all chance of frost has passed.
  • You can also start seeds indoors about 6 weeks before the last average frost.
  • Plan to plant in full sun with fertile, well-draining soil.
  • Don't plant too close together as molokhia plants grow outwards into a shrub shape so they'll need their space.
  • Once the plant reaches about 2 feet in height, you can start to harvest by cutting off the top 6 inches or so of growth.
  • Whatever was cut down, WILL grow back again, so expect more Egyptian spinach!
  • Water regularly and keep soil moist.

HARVESTING EGYPTIAN SPINACH SEEDS:

  • Once temperatures drop in the fall, leaf production will begin to slow and the plant will bolt.
  • It will produce small, bright yellow flowers.
  • The flowers will then be replaced by long, thin seed pods that can be harvested once they naturally dry.
